Day 217 – Yummy Stuff

Yes, I said yummy …. which is a rare find when you’re on a diet.  It’s surprising but true, sometimes I find fun (and under 300 calories) yummy foods to augment my diet. One of those is toast. I look forward to my toast days, and recently I stumbled onto some tasty options for toppings.

Who doesn’t love avocado? The poor avocado has gotten a pretty harsh rap for being too fattening. But It’s hard not to love the creamy texture and flavor – and an abundance of healthy omega fatty acids – in an avocado! Perhaps that’s why the fruit (yes, it’s a single-seeded berry) is appearing in many recipes. The recipes included some other options that weren’t as appealing to me, but these two are going on to my list of “fun alternatives.”

So, back to the toast … with no more than 300 calories and five ingredients!

1. SLICED AVOCADO WITH HUMMUS & BLACK PEPPER

Ingredients

1/3 avocado, sliced
2 tablespoons hummus
Dash of ground black pepper
1 slice whole-grain toast

Directions

Spread hummus on toast and top with sliced avocado and a sprinkle of black pepper.

Nutrition (per serving): Calories: 248; Total Fat: 13g; Saturated Fat: 2g; Monounsaturated Fat: 5g; Cholesterol: 0mg; Sodium: 265mg; Carbohydrate: 26g; Dietary Fiber: 8g; Sugar: 4g; Protein: 7g

 

2. SMASHED AVOCADO WITH FRIED EGG & SALSA

Ingredients

1/3 avocado, smashed
1 egg, fried
1 tablespoon salsa
1 slice whole-grain toast

Directions

Spread avocado on toast and top with fried egg and salsa.

Nutrition (per serving): Calories: 257; Total Fat: 13g; Saturated Fat: 3g; Monounsaturated Fat: 6g; Cholesterol: 186mg; Sodium: 360mg; Carbohydrate: 24g; Dietary Fiber: 6g; Sugar: 4g; Protein: 12g

 

And for the general life update … Positives: really doing a good job with my steps. Good swim today. Did my band exercises yesterday. Acupuncture on Tuesday and tomorrow (whew). Not-so-positive: Chronic back pain is a pain in the butt (literally). Still struggling with stomach issues. Wish I could get my sleep more regular. I’m tired.
