Day 196 – All About Oats

In the challenge to beat the boring, I’m always looking for fun new recipes. Oatmeal is one of my favorite breakfasts, it’s a classic. But sometimes it can get a little boring. My FitBit offers some fun oatmeal combos that are quick to prepare. They are low is sugar while yummy and satisfying. Consider oatmeal for an afternoon snack or even dessert. So here are some fun oaty recipes to try.  I have to substitute lactose-free products for all the dairy, but it doesn’t change the great tastes.

 

1. PUMPKIN OVERNIGHT OATS – if you like pumpkin, this is perfect for a  an afternoon snack or even a dessert for those of you who get desserts!

Ingredients

1 packet plain instant oats
1/4 cup plain Greek yogurt
1/4 cup pumpkin puree
1 teaspoon maple syrup
1/2 teaspoon pumpkin pie spice
2/3 cup unsweetened almond milk

Directions

Place all ingredients into a Mason jar and shake or stir to combine. Cover and refrigerate overnight. Serve cold. Calories: 190

 

2. APPLE-CINNAMON OATS – great for breakfast! This is pretty standard fare, but the apples, cinnamon, and nuts add some great flavors.

Ingredients

1 packet plain instant oats
1/2 apple, diced
2/3 cup unsweetened almond milk
1/4 teaspoon cinnamon
1 tablespoon chopped walnuts

Directions

Combine oats, apple, almond milk and cinnamon in a microwave-safe bowl and microwave for 90 seconds. Sprinkle with chopped walnuts and serve. Calories: 211

 

3. CHOCOLATE CHERRY OATS – mmmm, another one that is a dessert or a snack … or even breakfast! Any opportunity to add a little chocolate is on my list of good things!

Ingredients

1 packet plain instant oats
2/3 cup unsweetened almond milk
1/4 cup frozen cherries
1 teaspoon cocoa powder
1 tablespoon sliced almonds

Directions

Combine the oats, almond milk, cherries and cocoa powder in a microwave-safe bowl and microwave for 90 seconds. Top with sliced almonds. Calories: 185

 

On the regular blogging topic … my weight loss.

I’m still struggling with some mystery stomach ailment. Still going for acupuncture. Still making 3000+ steps per day. Went to the pool four times this week (and will add a fifth on Saturday). Still wanting to eat things not on my plan. Still feeling like I’m moving better. Still wishing I were anything but fat. Sigh
